Preheat oven to 425 degrees F (218 C) and position a rack in the middle of the oven.2. Bring large skillet to medium heat. Once hot, add 1 Tbsp olive oil, onion and peppers. Season with salt, herbs and stir. Cook until soft and slightly charred â€" 10-15 minutes, adding the mushrooms in the last few minutes. Set aside.3. Prepare sauce by addi ng tomato sauce to a mixing bowl and adding seasonings and salt to taste. Adjust seasonings as needed. Set aside. Note: If using tomato paste, add water to thin until desired consistency is reached.4. Prepare vegan parmesan if you haven’t already by blitzing raw cashews, sea salt, nutritional yeast and garlic powder in a food processor. Transfer to jar and refrigerate to keep fresh.5. Roll out dough onto a floured surface and transfer to a parchment-lined round baking sheet. You’re going to add the pizza WITH the parchment directly to the oven to properly crisp the crust, so any round object will do as it’s not actually going into the oven.6. Top with desired amount of tomato sauce (you’ll have leftovers, which you can store in a jar for later use), a sprinkle of parmesan cheese and the sautéed veggies.7. Use the baking sheet to gently slide the pizza directly onto the oven rack WITH the parchment underneath. Otherwise it will fall through.8. Bake for 17-20 minutes or until crisp and golden brown.9. Serve with remaining parmesan cheese, dried oregano and red pepper flake. Mediterranean baked sweet potatoesIngredients• 4 medium sweet potatoes* (~140 g each) • 1 15-ounce (425 g) can chickpeas, rinsed and drained • 1/2 Tbsp olive oil • 1/2 tsp each cumin, coriander, cinnamon, smoked (or regular) paprika • optional: Pinch of sea salt or lemon juiceGarlic herb sauce • 1/4 cup (60 g) houmous (or tahini) • juice of 1/2 lemon (~1 Tbsp) • 3/4 - 1 tsp dried dill (or sub 2-3 tsp fresh) • 3 cloves garlic, minced (1 1/2 Tbsp or 9 g) • Water or unsweetened almond milk to thin • optional: Sea salt to tasteToppings optional • 1/4 cup (45 g) cherry tomatoes, diced • 1/4 cup (15 g) chopped parsley, mince d • 2 Tbsp (30 ml) lemon juice • Chili garlic sauceMethod1. Preheat oven to 400 degrees F (204 C) and line a large baking sheet with foil.2. Rinse and scrub potatoes and cut in half length wise. This will speed cooking time. Otherwise leave whole and bake longer (approximately double the time (45 min - 1 hour).3. Toss rinsed and drained chickpeas with olive oil and spices and place on a foil-lined baking sheet.4. Rub the sweet potatoes with a bit of olive oil and place face down on the same baking sheet (or another baking sheet depending on size).5. While the sweet potatoes and chickpeas are roasting, prepare your sauce by adding all ingredients to a mixing bowl and whisking to combine, only adding enough water to almond milk to thin so it’s pourable. Taste and adjust seasonings as needed. Add more garlic for more zing, salt for savouriness, lemon juice for freshness, and dill for a more intense herb flavor.6. NOTE: If you don’t have houmous, tahini will make a great base su bstitution for the sauce - just adjust the seasonings to accommodate the lack of flavour tahini provides.7. Also prepare the parsley-tomato topping by tossing tomato and parsley with lemon juice and setting aside to marinate.8. Once sweet potatoes are fork tender and the chickpeas are golden brown - roughly 25 minutes - remove from oven.9. For serving, flip potatoes flesh-side up and smash down the insides a little bit. Then top with chickpeas, sauce and parsley-tomato garnish. Serve immediately.10. Add onions and garlic to a blender with remaining ingredients, omitting the tortilla crisps and adding only half of the green chilies. Blend until smooth, using the “liquify” setting if you have it to get it really smooth. Otherwise just blend for up to a minute, scraping down sides as necessary, until smooth and creamy.5. Drain the noodles, set aside, and cover (with a towel). To the same pot you boiled the noodles in, add the cashew cheese and cook on low stirring frequently until slightly thickened.6. Add the macaroni noodles to the cheese, along with the remaining green chilies and stir. A Rant on the College Gym Fear this woman.the forming of good habits. Now that youve entered the path of the gym rat warrior, the question of how to decode the college gym presents itself. Timing is everything when working out. Go to the gym with a plan;  its easy to get overwhelmed by the people.  Before dinner time on weekdays, the rec center could easily be confused with a flash mob, mixed with a Black Friday sale at Mall of America. My suggestion is to avoid this allotment of time completely and choose to work out in the morning or late evening. My second piece of advice is to learn, and abide, by the dress code for your gym. Nobody wants to see your areola exposed because you decided to   cut an old t-shirt into a sliver that covers nothing but your sternum and your vertebrae. Keeping that idea in mind, its safe to say that a large percentage of your peers wouldnt want to resuscitate you after a heat stroke that occurred from you wearing 4 layers of sweats. Try to keep a happy medium, and always remember: dont wear Timberland boots. A   common misconception for people at the gym: If I only do bench press every day, I should lose a whole bunch of weight.   This couldnt be more wrong. If youre looking to   lose weight, you are definitely going to have to throw in some cardio days. If youre looking to gain mass, you should get your swoll on more frequently. There are several archetypes of people common in most gyms. People watching is as essential as working out. The range from neon spandex-sporting girls to body builder wannabe guys really shows that many people use different forms of motivation. Bottom line, reader: take the college gym for what its worth, and try to shape healthy habits. Balance is the key to every health plan, so utilize it. Eventually, it will feel weird when you dont go to the gym, and thats an enriching experience. For me life is continuously being hungry. It was at that very moment in history that Armstrong and Aldrin made becoming an astronaut a tangible dream for children. “Mystery creates wonder and wonder is the basis of mans desire to understand.”â€"Neil Armstong At a young age, Ravi was instantly mesmerized and intrigued by space.  Since then, that natural curiosity has fueled his aspiration to one day become an astronaut like Neil Armstrong. With his desire to further explore space, he is determined to overcome any challenge. Ravi knows that he’ll need a high level of math proficiency in order to accomplish his dreams. He credits Kumon for his confidence in problem-solving â€" a vital skill needed to become an astronaut. “Kumon has helped me become an independent learner, allowing me to solve problems confidently,” said Ravi. “It has made me realize that no matter what challenges you face, you can always find the solution through hard work. I know that I will be able to achieve my dreams of becoming an astronaut because of this.” Ravi began his Kumon journey when he was only 4-years-old and has since become a curious learner, continually seeking to expand his knowledge. Already studying above grade level, he has an academic edge over his peers. In the Kumon Math Program, he is studying high school-level algebra working on quadratic and fractional functions. Ravi completed the Kumon Reading Program before entering 7th grade. He now has a solid grasp on literature, having already analyzed notable literary works such as Jane Austen’s Pride and Prejudice and William Shakespeare’s play, Macbeth. Ravi enjoys reading on his own and credits Kumon for expanding the genres of books he selects. While he really enjoys science-fiction and fantasy novels, he particularly enjoyed reading William Shakespeare’s A Midsummer Night’s Dream and The Tragedy of Hamlet, Prince of Denmark. Ravi is proud to say that his hard work paid off as he was accepted into honors courses all throughout middle school. Ravi’s peers know him for being gifted in math, especially when it comes to his quick mental calculation skills. He helps his younger sister at home with her math homework. Not only is Ravi an avid sports fan, he enjoys getting in the game as well. In the spring and fall months, you can find him on the baseball field and in the winter on the basketball court. He also plays the violin and has found the correlation between math and music and leverages his abilities to perfect his tempo and hear the intervals of tones. With Ravi’s natural sense of wonder and confidence, he will be able to achieve his dreams of space exploration. Ravi’s hard work and discipline didn’t go unnoticed, as he was one of 55 students selected to attend the 2018 Kumon Student Conference in Calgary, Canada. We had the opportunity to speak to Ravi about his Kumon journey. How has Kumon helped you academically? Kumon has helped me academically because I have been able to get into the honors courses every year. If you could sum up your Kumon experience in one word, what would it be? Amazing. What do you enjoy most about Kumon? I love that I am always learning something new in Kumon. What keeps you motivated in Kumon? My Kumon Instructor and parents always continue to motivate me, and I use that as a constant reminder to myself if I want to give up. What did it mean to you attending the Student Conference?
